WE ARE STILL ALIVE

We haven't done much exciting in the 5 months that I haven't blogged.

Joshua and I are both going to school and working full time so we don't have a lot of time for much else.

I got a new position at doTERRA. I am now a Sales Tax Specialist in the Finance Department. I absolutely love it.

Joshua changed his major to Biology in preparation for Dental School in 2018.

We went to Seattle, Washington to celebrate our 1 year anniversary.
I might post more later. We had a great time.

PINTEREST RUINS ALL PLANS

I sat down to do my homework...
Accounting if you didn't know.
It's my major.
... opened up my computer, and saw this
bad news, big guy.
haven't even tried to do my homework.
(that's my mommy in the corner)
good news: christmas is coming.
i want a baby christmas tree.
and cadbury balls to fill my candy bowl with.

i also want this right now.
real bad.
pink or black. i'm not picky.
i had the chance to go to the Women's Conference with the greatest women in my life.
Where we had the greatest fries of my life in a box from Bruges Waffles & Frites
Then my sweet husband got me flowers
Then, it doesn't look like it, but I broke my brother's stairs while holding his baby.
the tiny little vulture. grandpa broke the peanut shells and she snatched the peanuts.
he's not really a grump. just bad timing with the picture.
& some weekend inspiration from the parking garage at UVU...
"if you fall... fall forward."
also. i'm considering getting bangs. 
& dying my hair. like an ombre/melt type thing.
is that a horrible idea?

State Street Grill

>> Josua and I decided to try the State Street Grill last night.
It was good. I got a BL (a BLT without the T).
Joshua got a Breakfast Samich.
They were good. Nothing spectacular.
although we didn't really give them the chance to impress.
not much to do with a BL and Breakfast Samich...
But the fries were almost perfect.
They were crispy and potatoey.
would have been perfect with a thick shake.
mmmmhmmmm...

joshua gives it a 3
i give it a 3.5
they had Barq's.
we didn't try their milk shakes.. 
maybe next time. but only if they're thick.

we're pretty much famous

the whole day was beautiful.

i dropped a cooler on my heel.
it was one of those rolley ones. 
i thought i broke myself. apparently i'm still in tact.

i'm doing it anyways. 
>> school started. i'm considering majoring in accounting.
i'm a hot mess.
i've done one assignment in my trial accounting class,
surprisingly, i liked it. 
we'll see where this ends up.

we got the beats, we got the beats! yeah, we got the beats!

+ we went to 7-peaks for my work party.
& won these beats. 
they're pretty amazing i guess.
Joshua thinks they're his.
+ i love dōTERRA. they are so good to me. 

+ Joshua finally fulfilled my birthday promise and took me to dinner and a show.


- he played candy crush and two dots the whole time
+ i taught the little tiny beehives today.

"what's wrong with these photos?" photos.

Lots of crazy things have been happening in the Knapton home.
1. Joshua completed his goal of running a 5k.
2. he finished. time: 22:33
3. We went to the Steel Days Carnival.
Joshua, Brooks and I raced our horses. Brooks won. 
4. We have had lots of pretty sunsets thanks to the nasty fires. 
5.  We went on what seemed like a 16 hundred mile walk through the AF trails.
6. Fox Hollow is right behind those trees.
7. no caption necessary .. how?
8. we went to California Pizza Kitchen. it was alright. 
9. it wasn't my fault
10. big ol hashtag whoops.
Also. I had a brilliant idea this week. dōTERRA for baby. genius right? I know. 
I found this store, that's almost the same but not as cool. Zoe Organics.

If anyone can guess the "wrong" in all of these pics i'll give you something amazing.

Pinterest Review #1.

This may be the only one. We'll see how adventurous we really are.
Joshua & I found a recipe on Pinterest and decided to try it.
PEPPERJACK BACON MAC N' CHEESE.
we loved it. it was kinda spicy. and we didn't even put the jalapeños in it.
keep some juice close by.
this recipe made tons. we've been eating it for days.
the bacon and peppers were crispy and delicious.
here's our version of the recipe.

INGREDIENTS
…………………………………………………………………………………………………………..
12 ounces elbow macaroni
8 (or more) slices bacon, cut into pieces first, then cooked until crispy (it crisps up tons better this way)
½ white onion (or less. i like less.)
½ cup red pepper, diced
2 teaspoons minced garlic
3 tablespoons flour
½ cup half & half
¾ cup chicken broth
8 ounces shredded pepperjack cheese
4 ounces fat free cream cheese
salt & pepper to taste

INSTRUCTIONS

1. cook macaroni according to package directions & drain.
2. spray a large nonstick skillet with cooking spray and sauté onions and peppers for 3-4 minutes.
3. add garlic and sauté for another minute or two. don't burn it!
4. add the flour and stir until veggies are coated.
5. add half & half, chicken broth, pepperjack cheese and cream cheese. stir until cheeses are melted.
6. add sauce and bacon to cooked macaroni. stir.
